Description

These BBQ Chicken Sliders offer the perfect blend of succulent shredded chicken and creamy coleslaw. A great choice for quick meals or gatherings, they bring amazing flavor and ease of preparation to your table.


Ingredients

  • 1.5 pounds boneless skinless chicken breasts
  • 1 cup barbecue sauce
  • 3/4 cup chicken broth
  • 16 ounce bag coleslaw mix
  • 1/2 cup mayonnaise
  • 1 tablespoon vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoons sugar
  • salt and pepper to taste
  • 10 slider buns (hawaiian rolls work great)


Instructions

  1. Place chicken breasts in a slow cooker.
  2. Pour barbecue sauce and chicken broth over the chicken.
  3. Cover and cook on HIGH for 2 to 3 hours or LOW for 4 to 5 hours until the chicken reaches 165°F and shreds easily.
  4. Use two forks to shred the chicken directly in the slow cooker, then stir to mix with the sauce.
  5. In a medium bowl, whisk together mayonnaise, vinegar, lemon juice, and sugar.
  6. Add coleslaw mix to the dressing and toss until evenly coated; season with salt and pepper. Refrigerate until ready to serve.
  7. Slice the buns in half; toast if desired.
  8. On the bottom half of the buns, add shredded chicken followed by the coleslaw. Replace the top half of the buns and serve right away.

Notes

For added flavor, consider marinating the chicken in barbecue sauce overnight.
Adjust the sugar in the coleslaw to your taste.
Use any leftover chicken for sandwiches or salads.
