- 1 package trader joe’s beef birria meat + consommé
- 1 cup chicken broth
- 2 tablespoons fresh lime juice
- 2 large eggs
- 2 packs ramen noodles seasoning packets discarded
- Fresh cilantro chopped (for garnish)
- Lime wedges
- White onion finely diced (for garnish)
Instructions
- Combine the Trader Joe’s birria and chicken broth in a medium saucepan over medium-low heat. Bring to a simmer and stir occasionally. Mix in the lime juice just before removing from heat.
- Boil water in a medium saucepan. Carefully add the eggs and cook for 6½ minutes for soft-boiled eggs.
- After 3 minutes, add ramen noodles to the pot and gently separate them. Cook until both the eggs and noodles are ready at 6½ minutes.
- Use a slotted spoon to transfer the eggs to an ice bath to stop the cooking. Drain the noodles and divide them into two serving bowls.
- Pour the birria mixture over the noodles and garnish with cilantro, lime wedges, and diced white onion.
Notes
For firmer boiled eggs, adjust the cooking time by a minute.
This dish is best enjoyed immediately after preparation to appreciate the textures and flavors.
