Description

Ingredients

  • ¾ cup beef broth
  • 2 teaspoons cornstarch
  • 1 (4 oz.) can diced green chiles, undrained
  • 2 tablespoons lime juice
  • 1 teaspoon hot sauce
  • 1 teaspoon honey
  • 1 teaspoon each: onion powder, garlic salt, cumin, smoked paprika, dried oregano, chili powder
  • 1 ½ lbs. ground beef
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • ½ yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chopped cilantro, plus more to garnish
  • ½ cup salsa
  • 8 (6-inch) flour tortillas
  • 1 (16 oz.) can refried beans
  • ½ cup sour cream
  • 2 cups cooked rice
  • 3 cups mexican cheese
  • Green Onions, Cilantro, Tomatoes, Avocado


Instructions

  1. Preheat oven to 350° F.
  2. In a small measuring cup, mix beef broth and cornstarch. Add the rest of the sauce ingredients, then set aside.
  3. Season ground beef with salt and pepper in a skillet over medium-high heat. Cook for 7-10 minutes until browned, then drain excess grease.
  4. Incorporate the sauce mixture into the beef; let it come to a boil, then reduce heat and let simmer for 3 minutes. Add garlic and cilantro, cooking for 1 more minute before removing from heat.
  5. Spread salsa on the bottom of a 9 x 13-inch casserole dish.
  6. Cut tortillas in half and arrange them along the sides of the dish and in the center.
  7. Layer half of the beef filling over the tortillas.
  8. In a bowl, combine refried beans and sour cream, then dollop half over the beef filling and spread gently.
  9. Add half of the rice followed by 1 cup of cheese.
  10. Repeat layering with remaining tortillas, beef filling, refried beans, rice, and cheese.
  11. Cover and bake for 20 minutes, remove cover, then bake an additional 15 minutes until bubbly.
  12. Garnish with cilantro and desired toppings; serve with sour cream and tortilla chips.

Notes

Feel free to customize toppings like avocado or chopped tomatoes based on your preference.
This casserole can be prepared in advance and stored covered in the fridge before baking.
For a spicy kick, consider adding jalapeños or using a spicy cheese.
