These Cadbury Mini Egg Cookies are a delightful treat featuring buttery dough mixed with M&M’s and Mini Cadbury eggs. Quick to prepare, they offer a perfect blend of flavors for cookie lovers.

- 1 cup butter, room temperature
- 1 cup sugar
- 1 cup light brown sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1½ cups m&m's (easter colors), (divided)
- 1½ cups mini cadbury eggs, (divided)
Instructions
- Preheat your oven to 350 degrees F.
- In a stand mixer bowl, cream the butter with sugar and brown sugar until light and fluffy, for about 3 minutes. Add the eggs and vanilla gradually, scraping down the bowl as necessary.
- In another large bowl, mix the flour, baking powder, baking soda, and salt. Combine the dry ingredients with the butter mixture on low speed until just blended. Stir in the M&M's and Mini Cadbury eggs, keeping some aside for topping.
- Scoop 2-inch balls of dough onto a parchment-lined baking sheet, spacing them about 1-2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Once removed from the oven, place a few of the reserved chocolate eggs and M&Ms on top of the cookies, if desired.
- Let the cookies cool on the baking sheet for 5 minutes before moving them to a cooling rack to cool completely.
Notes
Ensure the butter is at room temperature for best mixing.
For an extra festive touch, add additional chocolate eggs and M&Ms on top just after baking.
