Description

These Cadbury Mini Egg Cookies are a delightful treat featuring buttery dough mixed with M&M’s and Mini Cadbury eggs. Quick to prepare, they offer a perfect blend of flavors for cookie lovers.


Ingredients

  • 1 cup butter, room temperature
  • 1 cup sugar
  • 1 cup light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1½ cups m&m's (easter colors), (divided)
  • 1½ cups mini cadbury eggs, (divided)


Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a stand mixer bowl, cream the butter with sugar and brown sugar until light and fluffy, for about 3 minutes. Add the eggs and vanilla gradually, scraping down the bowl as necessary.
  3. In another large bowl, mix the flour, baking powder, baking soda, and salt. Combine the dry ingredients with the butter mixture on low speed until just blended. Stir in the M&M's and Mini Cadbury eggs, keeping some aside for topping.
  4. Scoop 2-inch balls of dough onto a parchment-lined baking sheet, spacing them about 1-2 inches apart.
  5. Bake for 10-12 minutes, or until the edges are golden brown.
  6. Once removed from the oven, place a few of the reserved chocolate eggs and M&Ms on top of the cookies, if desired.
  7. Let the cookies cool on the baking sheet for 5 minutes before moving them to a cooling rack to cool completely.

Notes

Ensure the butter is at room temperature for best mixing.
For an extra festive touch, add additional chocolate eggs and M&Ms on top just after baking.
