Description

Ingredients

  • 1 ½ cups flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ cup butter softened
  • ½ cup sugar
  • ½ cup brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded carrots
  • 8 ounces cream cheese
  • 4 tablespoons butter softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • orange and green food coloring


Instructions

  1. Preheat the oven to 350 degrees and line an 8×8 baking pan with parchment paper. Spray with nonstick cooking spray and set aside.
  2. In a medium bowl, whisk together the flour, cinnamon, baking soda, baking powder, salt, ginger, and nutmeg. Set aside.
  3. In a separate bowl, beat together the butter, sugar, and brown sugar until light and fluffy.
  4. Add the eggs and vanilla, and beat until smooth.
  5. Add half of the dry ingredients and mix, then add the remaining dry ingredients and beat until smooth.
  6. Fold in the shredded carrots.
  7. Spread the batter in the prepared baking pan and bake for 35 to 40 minutes, until a toothpick inserted into the center comes out clean.
  8. Allow the cake bars to cool completely, then prepare the icing by beating together the cream cheese, butter, and vanilla. Gradually add the powdered sugar, mixing well after each addition.
  9. Separate a small amount of icing into two bowls. Add orange food coloring to one bowl and green to the other, mixing until combined. Transfer each color to a piping bag.
  10. Remove the cake bars from the pan by lifting the parchment paper. Spread the remaining icing over the top of the bars and cut them into 12 pieces.
  11. Decorate each cake bar with a carrot design using the orange and green icing.

Notes

Make sure to fully cool the cake before applying the frosting for best results.
