- 2 pounds ground chicken
- 1 cup italian breadcrumbs
- ½ cup grated parmesan cheese
- 3 tablespoons milk, any kind (i used 2%)
- 2 large eggs
- 2 tablespoons ketchup
- 2 tablespoons worcestershire sauce
- 2 teaspoons garlic powder
- 2 teaspoons italian seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ cup ketchup
- 2 tablespoons packed light brown sugar
Instructions
- Preheat the oven to 375℉. Line a medium baking sheet with parchment or aluminum foil and lightly grease it with cooking spray.
- In a large mixing bowl, combine ground chicken, breadcrumbs, parmesan cheese, milk, eggs, ketchup, Worcestershire sauce, garlic powder, Italian seasoning, salt, and pepper. Mix until just combined; do not overmix to ensure a tender loaf.
- Form the chicken mixture into a loaf shape in the center of the pan, evenly sized to ensure even cooking.
- Prepare the glaze by whisking together ketchup and brown sugar in a small bowl, then spread it evenly over the top of the loaf.
- Bake the loaf in the preheated oven for 40-45 minutes, or until browned and the internal temperature reaches 165℉. Let rest for 10 minutes before slicing.
Notes
Avoid overmixing the chicken mixture to keep the meatloaf tender.
Letting the meatloaf rest before slicing helps it maintain its shape and prevents crumbling.
