Description

Enjoy the comforting flavors of this Chicken Parmesan Casserole made with juicy rotisserie chicken, tangy marinara sauce, and a cheesy topping. Perfect for an easy dinner that brings everyone together.


Ingredients

  • 3-4 cups chopped rotisserie chicken
  • 2 cloves garlic minced
  • pinch crushed red pepper flakes
  • 5-6 basil leaves chopped or chifonade
  • salt and pepper to taste
  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2-1 cup shredded parmesan cheese
  • 2 cups garlic flavored croutons lightly crushed


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly spray a 9×13" baking dish with non-stick cooking spray and spread the chicken evenly in the bottom of the dish.
  3. Sprinkle the minced garlic, crushed red pepper flakes, basil, salt, and pepper over the chicken.
  4. Pour the marinara sauce evenly on top, using the back of a spoon to spread it if necessary.
  5. Sprinkle half of the shredded mozzarella and parmesan cheese over the sauce.
  6. Add a layer of lightly crushed croutons evenly on top, followed by the remaining cheese.
  7. Bake in the preheated oven for 40-45 minutes until bubbly and golden.
  8. Let the casserole rest for 5 minutes before serving.
  9. Serve with pasta and your favorite side dishes.

Notes

Feel free to add vegetables like spinach or bell peppers for added nutrition.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
For extra flavor, add Italian seasoning or garlic powder to the chicken.
