Description

These Chickpea Fritters stand out with their incredible flavor and simple preparation. Made from chickpeas, fresh parsley, and colorful bell peppers, they are ideal for a quick, healthy dinner or a delightful snack. Enjoy them warm with vegan tzatziki for a delightful homemade treat!


Ingredients

  • 14 oz. chickpeas, drained and rinsed
  • ¼ cup chopped parsley
  • 1 tsp garlic powder
  • 1 red bell pepper, chopped
  • ½ red onion, quartered
  • salt and pepper, to taste
  • 2/3 cup chickpea flour
  • ½ lime, juiced
  • neutral oil, for frying
  • vegan tzatziki, for serving if desired


Instructions

  1. Combine chickpeas, parsley, garlic powder, bell pepper, and red onion in a food processor. Season with salt and pepper.
  2. Process until the mixture is coarse, scraping the sides as needed.
  3. Add chickpea flour and lime juice to the mixture.
  4. Continue processing until just combined, leaving some larger chunks for texture. Add water if too dry, one tablespoon at a time.
  5. Divide the mixture into 6 portions, roll and flatten into patties.
  6. Heat oil in a nonstick skillet over medium-high heat and cook the fritters until golden brown on both sides and heated through. Drain on paper towels.
  7. Serve hot with vegan tzatziki on the side.

Notes

You can customize the fritters by adding other vegetables like zucchini or carrots.
If you prefer a spicier kick, consider adding some cayenne pepper to the mixture.
For a crispy outer layer, make sure the oil is hot before adding the fritters.
