- 14 oz. chickpeas, drained and rinsed
- ¼ cup chopped parsley
- 1 tsp garlic powder
- 1 red bell pepper, chopped
- ½ red onion, quartered
- salt and pepper, to taste
- 2/3 cup chickpea flour
- ½ lime, juiced
- neutral oil, for frying
- vegan tzatziki, for serving if desired
Instructions
- Combine chickpeas, parsley, garlic powder, bell pepper, and red onion in a food processor. Season with salt and pepper.
- Process until the mixture is coarse, scraping the sides as needed.
- Add chickpea flour and lime juice to the mixture.
- Continue processing until just combined, leaving some larger chunks for texture. Add water if too dry, one tablespoon at a time.
- Divide the mixture into 6 portions, roll and flatten into patties.
- Heat oil in a nonstick skillet over medium-high heat and cook the fritters until golden brown on both sides and heated through. Drain on paper towels.
- Serve hot with vegan tzatziki on the side.
Notes
You can customize the fritters by adding other vegetables like zucchini or carrots.
If you prefer a spicier kick, consider adding some cayenne pepper to the mixture.
For a crispy outer layer, make sure the oil is hot before adding the fritters.
