Description

Chili Mac is an irresistible and hearty dish that packs a punch with its savory flavors. Made with ground beef, macaroni, and zesty seasonings, this quick yet satisfying meal is ideal for busy nights or cozy gatherings.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • ¾ pounds lean ground beef
  • -3 teaspoons chili seasoning mix, or taco seasoning
  • ¼ teaspoon smoked paprika
  • 4 ounces diced green chilies
  • 1 cup canned diced tomatoes
  • 1½ cups vegetable broth, or beef broth
  • 1 teaspoon vegetable bouillon powder, or beef bouillon powder
  • 3 ounces tomato paste
  • 14 ounces can of black beans, rinsed, drained
  • 1 cup elbow macaroni
  • ½ cup shredded cheddar cheese
  • 1 teaspoon lime juice
  • salt and freshly ground black pepper, to taste
  • sour cream
  • pickled jalapenos
  • shredded cheddar cheese
  • chopped cilantro, for garnish


Instructions

  1. Heat the olive oil in a Dutch oven or cooking pot over medium-high heat.
  2. Add the finely chopped onion and cook for 3-4 minutes until soft.
  3. Stir in minced garlic and cook for about 15 seconds until fragrant.
  4. Add the ground beef, cooking until browned while breaking it apart, for about 6-8 minutes.
  5. Add the chili seasoning and smoked paprika to the pot and stir for 1 minute.
  6. Incorporate the diced green chilies, canned diced tomatoes, broth, bouillon powder, and tomato paste into the mixture.
  7. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  8. Add the rinsed black beans and elbow macaroni, stirring well.
  9. Cook for about 8 minutes, stirring occasionally until the pasta is tender.
  10. Add the shredded cheddar cheese, removing the pot from the heat once melted, then mix in the lime juice.
  11. Serve hot, garnished with pickled jalapenos, sour cream, shredded cheddar cheese, and chopped cilantro.

Notes

Feel free to substitute the ground beef with turkey for a lighter option.
For extra spice, add more chili seasoning or fresh jalapenos during cooking.
The dish can be made ahead of time and reheated for convenience.
