Description

These Cosmic Brownie Cookies burst with irresistible chocolate flavor, featuring a chewy brownie base topped with creamy ganache and vibrant sprinkles. Perfect for a quick, satisfying treat!


Ingredients

  • 18 ounce box brownie mix
  • ½ cup vegetable oil
  • 1 large egg
  • 4 ounces semi-sweet baking bar
  • ⅓ cup heavy cream
  • rainbow candy chip sprinkles


Instructions

  1. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the brownie mix, vegetable oil, and egg until smooth; the mixture will be thick.
  3. Roll 2 tablespoons of dough into a ball and place on the baking sheet; repeat with the remaining dough.
  4. Refrigerate the shaped cookie dough for 30 minutes.
  5. Preheat the oven to 350°F and line more baking sheets with parchment paper.
  6. Space the chilled cookie dough 2-3 inches apart on the baking sheets.
  7. Bake in the oven for 9-11 minutes until the tops no longer look glossy, being careful not to overbake.
  8. Allow cookies to cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the ganache by finely chopping the baking bar and placing it in a heatproof bowl.
  10. In a small saucepan, heat the heavy cream until just simmering, then pour over the chopped chocolate. Let sit for 5 minutes, then whisk until smooth.
  11. Dip the tops of the cooled cookies into the ganache, then place them back on the wire rack with the ganache side up.
  12. Immediately sprinkle rainbow candy chips on top of the ganache-covered cookies and let them set before serving.

Notes

Make sure to chill the dough to prevent spreading during baking.
If the ganache hardens, simply reheat gently to make it spreadable again.
Experiment with different toppings like nuts or different sprinkles.
