Description

Ingredients

  • ½ cup 2% cottage cheese
  • pinch sea salt
  • black pepper
  • olive oil
  • 1-2 tablespoon shredded cheddar cheese (optional)
  • freshly chopped chives


Instructions

  1. In a medium bowl, whisk the eggs, cottage cheese, salt, and black pepper to taste with a fork.
  2. Heat a medium skillet over medium-low heat and add oil.
  3. Once warm, pour the egg mixture into the skillet.
  4. Using a rubber spatula, scrape sections of eggs to the center of the pan as the bottom starts to set, creating soft folds for about 1 ½ to 2 minutes until just set.
  5. Just before serving, fold in the cheese until melted.
