- 8 ounces thick pasta pappardelle, tagliatelle, or rigatoni
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic finely minced
- ¾ cup vegan heavy cream
- ½ cup vegan parmesan cheese freshly grated
- 1 cup peas frozen, no need to thaw
- 1 medium lemon you'll just use the zest
- salt and pepper
- ½ cup panko breadcrumbs
- 1 tbsp olive oil
- 1 clove garlic small and finely grated
- 1 tsp lemon zest
- salt pinch of salt
Instructions
- Bring a pot of well-salted water to a boil and cook the pasta until al dente. Save 1/2 cup of pasta water and drain the rest.
- In a skillet, heat olive oil over medium heat. Add panko breadcrumbs and toast until golden, stirring often.
- Add garlic, lemon zest, and salt to the breadcrumbs, cooking for about 30 seconds before removing from heat.
- In a skillet, heat olive oil and vegan butter over medium heat. Add minced garlic and cook for about 30 seconds without browning.
- Pour in vegan cream and bring to a gentle simmer. Stir in vegan Parmesan cheese until melted and smooth.
- Add the peas and cook for 2-3 minutes until heated through and bright green.
- Combine the cooked pasta with the creamy sauce, tossing to coat, adding reserved pasta water if the sauce is too thick. Stir in black pepper and lemon zest.
- Serve warm, topped with the toasted breadcrumb mixture.
Notes
For an extra zing, consider adding a pinch of chili flakes for some heat.
You can substitute any thick pasta you prefer for this dish.
