Ingredients

  • 8 ounces thick pasta pappardelle, tagliatelle, or rigatoni
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic finely minced
  • ¾ cup vegan heavy cream
  • ½ cup vegan parmesan cheese freshly grated
  • 1 cup peas frozen, no need to thaw
  • 1 medium lemon you'll just use the zest
  • salt and pepper
  • ½ cup panko breadcrumbs
  • 1 tbsp olive oil
  • 1 clove garlic small and finely grated
  • 1 tsp lemon zest
  • salt pinch of salt


Instructions

  1. Bring a pot of well-salted water to a boil and cook the pasta until al dente. Save 1/2 cup of pasta water and drain the rest.
  2. In a skillet, heat olive oil over medium heat. Add panko breadcrumbs and toast until golden, stirring often.
  3. Add garlic, lemon zest, and salt to the breadcrumbs, cooking for about 30 seconds before removing from heat.
  4. In a skillet, heat olive oil and vegan butter over medium heat. Add minced garlic and cook for about 30 seconds without browning.
  5. Pour in vegan cream and bring to a gentle simmer. Stir in vegan Parmesan cheese until melted and smooth.
  6. Add the peas and cook for 2-3 minutes until heated through and bright green.
  7. Combine the cooked pasta with the creamy sauce, tossing to coat, adding reserved pasta water if the sauce is too thick. Stir in black pepper and lemon zest.
  8. Serve warm, topped with the toasted breadcrumb mixture.

Notes

For an extra zing, consider adding a pinch of chili flakes for some heat.
You can substitute any thick pasta you prefer for this dish.
Make sure not to overcook the garlic to avoid a bitter taste.
