Description

This Crockpot Marry Me Chicken is a delightful dish featuring tender chicken breasts simmered in a creamy sauce with sun-dried tomatoes and spices. Ingredients

  • 4 chicken breasts
  • Salt & Pepper
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 4 ounces sun-dried tomatoes, chopped
  • 2 tablespoons cornstarch
  • 1 teaspoon italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup fresh basil


Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over high heat. Brown the chicken for a couple of minutes on each side without cooking through.
  3. Place the chicken in the base of the crockpot.
  4. In a separate bowl, whisk together chicken broth, minced garlic, chopped sun-dried tomatoes, cornstarch, Italian seasoning, red pepper flakes, salt, and pepper.
  5. Pour the mixture over the chicken in the crockpot.
  6. Cover and cook on low for 3.5 hours or until the chicken is tender and reaches 165º F.
  7. In a bowl, mix together heavy cream, grated Parmesan cheese, and fresh basil.
  8. Once the chicken is done, remove it from the crockpot and stir the heavy cream mixture into the sauce. Add the chicken back, spooning the sauce over it, and cook for an additional 15 minutes until warmed through.
  9. Remove from the crockpot and serve with extra sauce over each piece.

Notes

For a richer flavor, use homemade chicken broth.
You can substitute fresh basil with dried herbs if needed, but adjust the quantity.
Serve with rice or pasta to soak up the delicious sauce.
