These Easy Vegan Pigs in a Blanket are packed with flavor and simple to make. Featuring baby carrots wrapped in crescent rolls, they’re an effortless snack that satisfies all cravings.

- 16 baby carrots
- 2 cans crescent rolls
- 1 tbsp everything bagel seasoning
- ¼ cup soy sauce
- 1 cup vegetable broth
- 1 tbsp maple syrup
- 2 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Add the baby carrots to a pot of water and boil until tender but firm, about 10 minutes. Remove and set in a bowl.
- Mix all marinade ingredients together and pour over the boiled carrots. Refrigerate overnight or for at least 12 hours.
- Once marinated, drain excess liquid. Preheat oven to 375°F and line a baking sheet with parchment paper.
- Roll out the crescent roll dough and place one marinated carrot at one end, then roll to cover completely.
- Repeat this process until all carrots are wrapped in dough.
- Sprinkle Everything Bagel Seasoning over the top before baking.
- Bake in the oven for 15 minutes or until golden brown.
Notes
Make sure the carrots are not overcooked to avoid mushiness after baking.
Serve with your favorite dipping sauce for an extra kick!
