- ¼ cup butter
- 1 cup milk
- 2 tablespoons sugar
- 1 packet active dry yeast (not instant-rise yeast)
- 2 cups all-purpose flour
- 1 ½ teaspoon kosher salt
- 2 tablespoons vital wheat gluten
Instructions
- Melt the butter in a small saucepan, then add milk and sugar. Heat to 110°F and remove from heat.
- Sprinkle yeast over the milk mixture and stir lightly, letting it sit for 5 minutes until foamy.
- In a stand mixer, combine flour, vital wheat gluten, and salt. Add the foamy yeast mixture and mix on medium speed for 3 minutes.
- Cover the dough and let it rest for 10 minutes.
- Fold the dough over itself 2-3 times with a spatula. Place it in a buttered loaf pan and smooth the top.
- Cover the loaf pan and let it rise in a warm spot for 1 hour until it has doubled in size.
- Preheat the oven to 375°F and bake for 30-35 minutes until golden and hollow-sounding when tapped.
- As soon as it comes out of the oven, brush the top with melted butter.
- Let the bread cool in the pan for 10 minutes, then transfer to a rack and cool for at least 20 minutes before slicing.
Notes
Use an instant read thermometer for accurate milk temperature.
For best results, proof the bread in a warm oven.
