Description

  • 2 large eggs
  • 1½ tablespoons cool water
  • 1¼ cups panko breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon garlic powder (preferably Kinder's woodfired garlic)
  • 1½ teaspoons cajun seasoning (preferably low salt or no salt)
  • ½ teaspoon freshly ground black pepper
  • lbs cod filets (cut into strips or bite-sized pieces)
  • vegetable oil (for frying)
  • lemon wedges (for serving)
  • tartar sauce (optional)


Instructions

  1. Pat the cod filets dry with paper towels.
  2. Set up three shallow bowls: one with flour, one with beaten eggs mixed with water, and the last with panko breadcrumbs, salt, garlic powder, Cajun seasoning, and black pepper.
  3. Dredge each cod filet in flour, dip it into the beaten egg, and coat with the breadcrumb mixture, ensuring a good coverage.
  4. Heat vegetable oil to 350 degrees in a heavy pot. Using tongs, carefully place the coated cod into the hot oil and fry for 4-5 minutes, flipping halfway, and work in small batches to avoid overcrowding.
  5. Transfer the fried cod to a paper towel-lined plate and keep warm in the oven while frying the remaining pieces.

Notes

For extra flavor, use fresh herbs or a squeeze of lemon on top before serving.
Ensure the oil is at the right temperature before frying to achieve that perfect crispiness.
Serve with homemade tartar sauce for an extra touch.
