- In a shallow bowl, whisk together the flour, sea salt, black pepper, paprika, garlic powder, and onion powder.
- Beat the eggs in a separate shallow bowl.
- Place pork chops between two sheets of plastic wrap or parchment paper and pound with a meat mallet until they are about ½ to ¾ inch thick.
- Heat vegetable oil in a cast iron skillet to about 375°F, ensuring it's about ¾ inch deep over medium-high heat.
- Coat each pork chop in the flour mixture, ensuring both sides are covered. Then dip each chop into the beaten eggs and return to the flour mixture for another coating.
- Carefully place the coated pork chop into the hot oil, maintaining the oil temperature between 350°F and 375°F. Fry for about 3 minutes on one side, flip them, and cook for another 2 minutes on the other side, or until the internal temperature reaches 145°F.
- Transfer the fried pork chops to a plate lined with paper towels and let them rest for 3 minutes before serving.
- Repeat the dredging and cooking process with the remaining pork chops, ensuring not to overcrowd the pan.
- Serve the pork chops hot and enjoy!
