Description

This Granola is a delightful blend of oats, nuts, and dried fruit. Its simple preparation and wholesome ingredients make it a great choice for breakfast or a quick snack. Enjoy a homemade treat that satisfies your cravings without compromising on health!


Ingredients

  • ⅓ cup melted coconut oil
  • ¼ cup maple syrup
  • 2 tablespoons brown sugar
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • 2 cups rolled oats
  • ¼ cup coconut flakes, or chips
  • ½ cup mixed nuts, chopped
  • 1 cup dried blueberries


Instructions

  1. Preheat the oven to 300ºF and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the melted coconut oil, maple syrup, brown sugar, vanilla extract, and salt.
  3. Fold in the rolled oats, coconut flakes, chopped mixed nuts, and dried blueberries, stirring until well combined.
  4. Spread the mixture evenly on the prepared baking tray and press down with a spatula.
  5. Bake for 10 minutes, remove from the oven, stir, press down again, and bake for another 10 minutes. Stir once more, press down, and bake for an additional 5-7 minutes until golden.
  6. Once done, let it cool; the granola will harden as it cools.
  7. Serve with milk and store in an airtight container.
