- ⅓ cup melted coconut oil
- ¼ cup maple syrup
- 2 tablespoons brown sugar
- 1 teaspoon pure vanilla extract
- ¼ teaspoon salt
- 2 cups rolled oats
- ¼ cup coconut flakes, or chips
- ½ cup mixed nuts, chopped
- 1 cup dried blueberries
Instructions
- Preheat the oven to 300ºF and line a large baking sheet with parchment paper.
- In a large bowl, combine the melted coconut oil, maple syrup, brown sugar, vanilla extract, and salt.
- Fold in the rolled oats, coconut flakes, chopped mixed nuts, and dried blueberries, stirring until well combined.
- Spread the mixture evenly on the prepared baking tray and press down with a spatula.
- Bake for 10 minutes, remove from the oven, stir, press down again, and bake for another 10 minutes. Stir once more, press down, and bake for an additional 5-7 minutes until golden.
- Once done, let it cool; the granola will harden as it cools.
- Serve with milk and store in an airtight container.
