Description

This Healthy Chicken Tortilla Soup combines irresistible flavors and simple prep, featuring rotisserie chicken, fresh vegetables, and zesty spices—an ideal choice for a quick dinner or a wholesome meal!


Ingredients

  • 2 teaspoons olive oil or a generous amount of cooking spray
  • 1 cup chopped onion, about 1 small onion
  • 2 cups diced celery, about 4 medium stalks
  • 4 minced garlic cloves, about 2 teaspoons minced garlic
  • 4 medium chopped tomatoes, or 2 cans diced tomatoes
  • 2 cups water
  • 4 cups low-sodium chicken broth
  • 3 cups chopped or shredded rotisserie chicken
  • 2 cups thinly sliced carrots, about 3 medium peeled
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper, add less or omit, if desired
  • 1/2 teaspoon sea salt, plus more to taste
  • 1/2 teaspoon ground black pepper, plus more to taste
  • optional garnish: chopped avocado, chopped fresh cilantro, crumbled cotija cheese, greek yogurt, crumbled tortilla chips


Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add chopped onion and diced celery; cook for about 5 minutes, stirring frequently until soft.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add chopped tomatoes and cook for 5 minutes, or until softened, then set aside.
  5. Blend the onion and tomato mixture with water until smooth in a high-speed blender or food processor.
  6. Return the blended mix to the pot and add chicken broth, rotisserie chicken, sliced carrots, oregano, chili powder, garlic powder, cumin, cayenne pepper, sea salt, and black pepper.
  7. Bring to a boil, then reduce heat to medium-low and cook for 10 to 30 minutes, until the carrots are tender.
  8. Serve with desired toppings such as lime juice, avocado, cilantro, cheese, Greek yogurt, or tortilla chips.

Notes

For a spicier soup, increase the cayenne pepper to taste.
Feel free to customize toppings based on your preference.
