Ingredients

  • 2 tablespoons butter, melted
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1/2 cup water
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 1 pint heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon pure vanilla extract


Instructions

  1. Melt the butter in the microwave or on the stove and let it cool for a few minutes.
  2. Blend the flour, milk, water, eggs, salt, sugar, and vanilla extract in a blender until well mixed.
  3. Allow the batter to rest in the fridge for 30 minutes to 2 hours until the bubbles have dissolved, if possible.
  4. Heat a skillet over medium heat and lightly coat it with cooking spray or melted butter.
  5. Pour about 1/4 cup of batter into the heated pan, quickly swirl it to evenly coat the bottom.
  6. Cook for about 1 to 2 minutes until set, then flip and cook for another 90 seconds.
  7. Repeat with the remaining batter, stacking cooked crepes on a plate.
  8. To make whipped cream, beat heavy whipping cream until stiff peaks form, then add powdered sugar and vanilla extract and stir gently.
  9. Fill crepes with toppings like Nutella, berries, or banana slices and enjoy!

Notes

Resting the batter allows for better texture in the crepes.
Use an 8 to 10-inch skillet for best results.
Adjust the filling based on your preference for sweet or savory crepes.
