- 2 cups heavy cream
- ¾ cup granulated sugar
- 1 tablespoon lemon zest (from about 1 medium lemon)
- ⅓ cup fresh squeezed lemon juice (from about 1 medium lemon)
Instructions
- Wash and dry 2 lemons. Use a zester to zest 1 lemon.
- Ensure you have 1 tablespoon of zest. If not, zest the 2nd lemon.
- Cut 1 lemon in half and juice it, removing any seeds. Set aside. You should have ⅓ cup of lemon juice. If not, juice the 2nd lemon.
- In a saucepan, heat 2 cups of heavy cream, ¾ cup of granulated sugar, and 1 tablespoon of lemon zest over medium heat, whisking constantly to dissolve the sugar. Bring to a boil and maintain boiling for 6 minutes, whisking continuously to prevent overflow.
- After 6 minutes, take the saucepan off the heat and whisk in ⅓ cup of lemon juice.
- Strain the mixture through a mesh colander into 5 ramekins, filling each about ¾ of the way to allow for setting.
- Refrigerate immediately for 2 hours or until the posset has set. Serve topped with fresh berries or whipped cream, if desired.
Notes
Make sure to whisk continuously while heating to avoid curdling.
Adjust sweetness by varying the amount of sugar based on your preference.
Feel free to experiment with different toppings like nuts or chocolate shavings.
