  • 2 english muffins
  • 1 ripe avocado, mashed
  • 2 sausage patties
  • 2 large eggs
  • 4 slices of bacon
  • Salt and pepper to taste


Instructions

  1. Toast the English muffins until golden brown. Meanwhile, mash the avocado in a bowl until creamy but still textured.
  2. In a skillet over medium heat, cook the sausage patties until browned and fully cooked. Transfer to a paper towel to drain excess grease.
  3. In the same skillet, cook the bacon slices until crispy and transfer to a paper towel to remove excess fat.
  4. Fry the eggs in the same skillet, cooking until the whites are set and the yolks are still runny for a deliciously 'dippy' effect.
  5. Assemble the sandwich by spreading mashed avocado on each half of the toasted muffins. Place a sausage patty on the bottom half, followed by a fried egg and two slices of bacon. Season with salt and pepper to taste, then serve.
