Description

Marry Me Chicken Pasta is a delightful dish combining tender chicken, savory sun-dried tomatoes, and a creamy sauce over pasta, creating a mouthwatering meal perfect for any night. Quick to prepare, this recipe is a flavorful choice for busy weeknights or romantic dinners.


Ingredients

  • 2 boneless skinless chicken breasts cut into bite-sized pieces
  • salt and freshly ground black pepper to taste
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1/2 teaspoon red pepper flakes optional
  • 1/2 cup chopped sun-dried tomatoes in oil, drained
  • 1 teaspoon italian seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated parmesan cheese plus more for garnish
  • 8 ounces pasta penne, fettuccine, or similar
  • fresh basil sliced thin for garnish


Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Season chicken with salt, pepper, and garlic powder.
  3. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and cook for 5–6 minutes, stirring occasionally until cooked through. Remove from skillet and set aside.
  4. In the same skillet, add garlic, red pepper flakes, and sun-dried tomatoes. Sauté for 1–2 minutes until fragrant.
  5. Stir in Italian seasoning, cream, and chicken broth. Bring to a simmer, then reduce heat and cook for 3–5 minutes until slightly thickened.
  6. Stir in Parmesan cheese until melted and creamy. Taste and season with salt and pepper.
  7. Return cooked chicken to the sauce. Add cooked pasta and toss to coat. If needed, add reserved pasta water a splash at a time to loosen the sauce.
  8. Serve immediately, topped with more Parmesan and fresh basil.

Notes

Feel free to substitute with rotisserie chicken for a quicker preparation.
Adjust seasoning according to taste for customized flavor.
