Marry Me Chicken Tortellini is a delightful dish that combines tender chicken with creamy cheese tortellini and sun-dried tomatoes. This quick and satisfying meal is perfect for family dinners, blending rich flavors and a comforting texture that will keep everyone coming back for more.

  • 9 ounces cheese tortellini cooked
  • 2 tablespoon olive oil
  • 1 pound chicken thighs cut into 1 inch pieces
  • salt to taste
  • pepper to taste
  • 3 garlic cloves minced
  • ½ cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup parmesan cheese shredded
  • 1 teaspoon italian seasoning
  • ½ cup fresh basil torn into pieces for garnish


Instructions

  1. Cook tortellini according to package instructions to al dente and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Season chicken thigh pieces with salt and pepper.
  4. Add the chicken to the pan in a single layer and cook for 5 to 7 minutes, turning occasionally until golden and cooked through.
  5. Remove the chicken from the pan and set aside, keeping the browned bits in the pan.
  6. In the same pan, add chopped sun-dried tomatoes and sauté for 1 minute.
  7. Add minced garlic and sauté for an additional 30 seconds.
  8. Pour in heavy cream and chicken broth, stirring well to combine and scrape up any browned bits.
  9. Bring the sauce to a gentle simmer without boiling.
  10. Stir in parmesan cheese and Italian seasoning. Let sauce simmer gently for about 5 minutes until it thickens slightly.
  11. Taste and adjust salt and pepper as needed.
  12. If desired, add a pinch of crushed red pepper flakes for heat.
  13. Add the cooked tortellini and chicken back into the pan, tossing gently to coat in the creamy sauce. Warm together for about 2 minutes.
  14. Garnish with fresh basil and serve immediately straight from the pan.

Notes

Feel free to use chicken breast instead of thighs for a leaner option.
This dish pairs well with a garden salad or garlic bread.
