- 4 large chicken breasts or two sliced in half lengthwise
- 2-4 tablespoons olive oil
- 1 ½ teaspoons salt
- ¼-1/2 teaspoon pepper
- ½ teaspoon onion powder
- 1 teaspoon granulated garlic
- 1 teaspoon paprika (smoked paprika is great here)
- 1 teaspoon dried oregano
- 1 pinch chipotle powder or cayenne pepper
Instructions
- In a small bowl, combine all of the seasoning ingredients.
- Trim the chicken breasts and thoroughly dry them with paper towels.
- Sprinkle the spice mixture generously over both sides of the chicken.
- Heat a skillet over medium-high heat and add 2 tablespoons of olive oil. Place the chicken in the skillet and cook for 5 to 6 minutes without moving it to ensure a golden-brown sear.
- Flip the chicken, adding the remaining oil if necessary, and continue cooking for another 5 to 6 minutes or until the internal temperature reaches 165°F.
Notes
For extra flavor, marinate the chicken in the seasoning for 30 minutes before cooking.
Pair with a side of vegetables or rice for a complete meal.
Make sure the skillet is hot enough before adding the chicken for the best sear.
