Description

Ingredients

  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/2 tsp kosher salt
  • 2 20 oz cans of pineapple (sliced or in chunks)
  • 1/2 cup pineapple juice (reserved from cans)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded cheddar cheese
  • 1 sleeve (about 30) buttery crackers (ritz) (crushed)
  • 6 tbsp unsalted butter (melted)


Instructions

  1. Preheat the oven to 350°F and grease a 9×9-inch baking dish.
  2. In a large bowl, combine sugar, flour, and salt. Add the drained pineapple (chopping slices if necessary) and the reserved juice. Gently fold in both types of cheddar cheese.
  3. Transfer the pineapple mixture into the greased baking dish.
  4. In a separate bowl, mix crushed crackers with melted butter and 1/2 cup of sharp cheddar cheese until evenly coated.
  5. Sprinkle the cracker mixture over the casserole.
  6. Bake for 30 to 35 minutes, until bubbling around the edges and the topping is golden brown.
  7. Allow to cool for 10 minutes before serving, as the casserole will thicken as it sits.

Notes

Feel free to use fresh pineapple if you prefer.
For added flavor, you can mix in crushed nuts with the cracker topping.
This dish makes great leftovers and can be reheated in the oven.
