- 1 cup water or chicken stock
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon ground black pepper
- ½ cup bbq sauce
- 5 large hamburger buns or dinner rolls
- ⅓ cup mayo
- 2 tablespoons apple cider vinegar
- 1 pinch salt and pepper
- 1 teaspoon sugar optional
- 1 to 2 teaspoons water to thin if needed
- 8 ounces coleslaw vegetable mix
Instructions
- Put the chicken breasts into an Instant Pot or pressure cooker.
- Pour in the water or chicken stock, then season the chicken with salt, garlic powder, and black pepper.
- Seal the lid and pressure cook on Manual HIGH for 10 minutes.
- Allow the steam to release naturally for 5 to 10 minutes, then carefully open the pressure valve and remove the lid.
- Move the chicken to a bowl and shred it using two forks or a meat shredder.
- Mix in the BBQ sauce and set the mixture aside.
Notes
For a keto option, use no-sugar BBQ sauce.
Feel free to adjust the amount of vinegar in the coleslaw for extra tang.
Adding the optional sugar enhances the coleslaw’s flavor.
