Description

This Resurrection Cookie boasts an irresistible flavor with simple prep. Made with mini chocolate chips and egg whites, it’s a delightful treat perfect for any occasion.


Ingredients

  • 3/4 cup mini chocolate chips
  • 1 teaspoon vinegar
  • pinch of salt
  • 1 cup sugar
  • 3 egg whites


Instructions

  1. Preheat the oven to 300 degrees Fahrenheit.
  2. In a mixing bowl, combine vinegar, salt, sugar, and egg whites.
  3. Beat on medium high speed until the egg whites become glossy and stiff, about 5-10 minutes.
  4. Gently fold in the mini chocolate chips.
  5. Using a spoon, drop mounds of the mixture onto a cookie sheet lined with parchment paper.
  6. Turn off the oven and place the cookie sheet inside the warm oven, sealing it shut. Leave overnight.
  7. In the morning, remove the cookies and cut them in half with a knife to reveal the hollow interior.

Notes

For extra flavor, add a splash of vanilla extract to the mixture.
Ensure the egg whites are at room temperature for better volume.
