Description

Enjoy mouthwatering Salt and Pepper Shrimp, featuring perfectly seasoned shrimp with a crispy coating. This simple dish combines shrimp with garlic, ginger, and fresh chili for a delightful meal that’s quick and satisfying.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 red thai chili peppers
  • 3 tablespoons fish sauce
  • 1 clove garlic
  • 1 inch piece of ginger
  • 3 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • 2 scallions, sliced
  • 1 teaspoon whole peppercorns
  • 1 teaspoon coarse salt, or to taste
  • fresh cilantro leaves for garnish
  • oil for frying


Instructions

  1. Place the shrimp in a bowl and add the fish sauce, tossing gently to coat. Let sit while preparing other ingredients.
  2. In a mortar and pestle, coarsely grind the peppercorns and set aside.
  3. Coarsely chop the garlic, ginger, and red chili peppers.
  4. Drain excess fish sauce from the shrimp.
  5. In a bowl, mix together flour and cornstarch. Toss shrimp in this mixture until fully coated.
  6. Heat oil in a pan to about 350°F (175°C), adding shrimp in small batches to avoid overcrowding.
  7. Fry shrimp for about 3 minutes, flipping halfway, until golden brown and crisp.
  8. Remove shrimp and set aside on a plate lined with paper towels.
  9. Pour off most oil from the pan, leaving about 1 tablespoon.
  10. Add garlic and ginger to the pan, sautéing for 2–3 minutes until fragrant.
  11. Add chopped chili peppers and cook for an additional 1–2 minutes.
  12. Toss in the scallions and cook for about 2 minutes more.
  13. Add fried shrimp back into the pan, gently tossing to coat in the flavors.
  14. Turn off heat, sprinkle crushed peppercorns and add coarse salt to taste. Garnish with fresh cilantro leaves.
  15. Serve immediately for a hot and crispy dish.

Notes

Ensure oil is hot enough for frying to achieve crispness.
Customize the level of heat by adjusting the number of chili peppers used.
Serve with rice or noodles for a complete meal.
