- 2 tablespoons unsalted butter
- 1 onion (finely chopped)
- 4 cloves garlic (minced or pressed)
- 1 tablespoon ground cumin
- 2 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon cayenne pepper
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground turmeric
- 1 12-ounce can tomato paste
- 1 cup water
- 1 cup heavy cream
- 1 tablespoon white sugar
Instructions
- Melt the butter in a large saucepan over medium heat.
- Add the onion and cook until translucent, about 5 minutes.
- Stir in the garlic and cook just until fragrant, about 1 minute.
- Stir the cumin, paprika, salt, ginger, cayenne pepper, cinnamon, and turmeric into the onion mixture; cook until fragrant, about 2 minutes.
- Stir in the tomato paste and water. Bring to a boil, then reduce the heat to low and simmer for 10 minutes.
- Stir in the heavy cream and sugar. Bring sauce back to a simmer and cook, stirring often, until sauce is thickened, 10 to 15 minutes.
Notes
Adjust the spice level by modifying the cayenne pepper to taste.
This sauce pairs well with chicken, but can also be served with vegetables or paneer for a vegetarian option.
Store leftovers in an airtight container in the fridge for up to a week.
