  • 3/4 cup sour cream, room temperature or greek yogurt
  • 1 cup buttermilk, room temperature
  • 2 cups unsalted butter, room temperature
  • 8 oz cream cheese, room temperature
  • 4 cups powdered sugar, sifted
  • 1 tbsp vanilla bean paste


Instructions

  1. Preheat the oven to 350℉ and prepare three 8-inch cake pans with nonstick spray and parchment paper.
  2. Sift together flour, baking powder, baking soda, salt, and dry milk powder in a medium bowl.
  3. In a large bowl, use a mixer to beat together the butter, oil, and sugar on high speed for 2 minutes until fluffy and white.
  4. Mix in the egg whites, vanilla bean paste, and sour cream on medium speed for 1 minute to incorporate air into the eggs.
  5. Gradually add the dry ingredients and buttermilk, mixing on low speed until just combined. Use a rubber spatula to ensure everything is thoroughly mixed.
  6. Divide the batter evenly among the three prepared cake pans and bake for 25-28 minutes or until a toothpick comes out clean.
  7. Allow the cakes to sit in the pans for 10 minutes before transferring to a cooling rack to cool completely.
