This Viral Doner Kebab is a delightful blend of ground lamb, garlic, and spices, all wrapped in parchment for easy baking. Perfect for a quick, savory meal!

- 1½ lbs ground lamb or mutton
- 1 small onion finely grated
- 3 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
Instructions
- Preheat your oven to 400°F and line a rimmed baking sheet with parchment paper.
- In a large bowl, mix together the ground lamb (or mutton), grated onion, minced garlic, olive oil, salt, paprika, cumin, oregano, and black pepper until well combined and slightly sticky.
- Transfer the meat mixture to a clean sheet of parchment paper and shape it into a rough rectangle. Place another sheet of parchment on top and roll it out to a thin rectangle, about ¼ inch thick.
- Peel off the top sheet of parchment, then roll the meat tightly into a log shape using the bottom sheet to guide you. Place seam-side down on the prepared baking sheet.
- Bake for 20 minutes or until the meat is cooked through. Reserve the juices from the baking sheet, set aside.
- Using a sharp knife, slice or tear the meat into doner-style pieces. Spread them out on the baking sheet and drizzle the reserved juices over the top.
- Broil for 5-8 minutes, turning the pieces once or twice until they are crispy and golden. Keep a close eye to avoid overcooking. Serve immediately.
Notes
For added flavor, marinate the meat mixture for a couple of hours before cooking.
Serve with pita bread and your favorite sauces and toppings like lettuce, tomatoes, and yogurt.
