Description

Avalanche Cookies combine creamy white chocolate and peanut butter with crispy rice cereal for a mouthwatering treat. Simple to prepare, this sweet snack is perfect for sharing at gatherings or enjoying as a delightful dessert.


Ingredients

  • 3 cups White Chocolate Chips
  • 1 1/4 cups Creamy Peanut Butter
  • 1/4 tsp Salt
  • 1/4 tsp Vanilla Extract
  • 2 cups Crispy Rice Cereal
  • 2 cups Mini Marshmallows
  • 3/4 cup Mini Chocolate Chips (Divided)


Instructions

  1. Line two large cookie sheets with parchment paper or a silicone liner and set aside.
  2. In a large microwave-safe bowl, add the white chocolate chips. Microwave in 30-second increments, stirring for about 15 seconds in between, until smooth.
  3. Once melted, stir in the peanut butter, salt, and vanilla until the mixture is creamy.
  4. Gently fold in the crispy rice cereal and mini marshmallows until well coated.
  5. Add 1/2 cup of the mini chocolate chips and mix until combined.
  6. Scoop the mixture by 1 to 2 tablespoon portions onto the prepared cookie sheets. Top each with a few extra mini chocolate chips.
  7. Allow the cookies to sit at room temperature for a couple of hours or refrigerate for 1 hour until solid.

Notes

Store cookies in an airtight container to keep them fresh.
Feel free to add nuts or dried fruit for extra flavor.
