Avalanche Cookies combine creamy white chocolate and peanut butter with crispy rice cereal for a mouthwatering treat. Simple to prepare, this sweet snack is perfect for sharing at gatherings or enjoying as a delightful dessert.

- 3 cups White Chocolate Chips
- 1 1/4 cups Creamy Peanut Butter
- 1/4 tsp Salt
- 1/4 tsp Vanilla Extract
- 2 cups Crispy Rice Cereal
- 2 cups Mini Marshmallows
- 3/4 cup Mini Chocolate Chips (Divided)
Instructions
- Line two large cookie sheets with parchment paper or a silicone liner and set aside.
- In a large microwave-safe bowl, add the white chocolate chips. Microwave in 30-second increments, stirring for about 15 seconds in between, until smooth.
- Once melted, stir in the peanut butter, salt, and vanilla until the mixture is creamy.
- Gently fold in the crispy rice cereal and mini marshmallows until well coated.
- Add 1/2 cup of the mini chocolate chips and mix until combined.
- Scoop the mixture by 1 to 2 tablespoon portions onto the prepared cookie sheets. Top each with a few extra mini chocolate chips.
- Allow the cookies to sit at room temperature for a couple of hours or refrigerate for 1 hour until solid.
Notes
Store cookies in an airtight container to keep them fresh.
Feel free to add nuts or dried fruit for extra flavor.
