  • 1 cup buttermilk
  • 1/3 cup molasses
  • 2 teaspoons white vinegar
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup raisins, optional


Instructions

  1. If using raisins, place them in a small bowl and cover with hot water. Let them soak for 15 minutes, then drain and set aside.
  2. In a large bowl, whisk together the rye flour, whole wheat flour, cornmeal, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together the buttermilk, molasses, white vinegar, and melted butter.
  4. Pour the wet ingredients into the dry mixture. Stir until no flour streaks remain. If using, fold in the soaked raisins.
