Description

Savor the flavors of this Breakfast Burrito, featuring crispy tater tots, savory sausage, and fluffy scrambled eggs wrapped in a warm tortilla. It’s an easy, satisfying meal ideal for busy mornings or a cozy brunch with friends.


Ingredients

  • 2 cups frozen tater tots
  • 8 ounce block cheddar cheese
  • 2 tablespoons butter
  • 6 breakfast sausage patties
  • 6 slices bacon
  • 2 roma tomatoes, diced
  • ½ white onion, diced
  • 1 green bell pepper, diced
  • 6 eggs
  • ¼ cup milk
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 6 burrito size flour tortillas
  • picante sauce


Instructions

  1. Bake the tater tots according to package directions.
  2. While the tater tots are baking, shred the cheese into a bowl and set aside.
  3. Heat a large frying pan over medium heat.
  4. Add butter to the pan and melt, then add the sausage patties and brown for 3 minutes on each side. Remove the patties and set aside.
  5. Add bacon to the pan and cook until crispy, then remove and place on a paper towel-lined plate. Discard all but 1-2 tablespoons of bacon drippings from the pan.
  6. Add the diced tomato, onion, and bell pepper to the pan and sauté for 3 minutes.
  7. In a bowl, whisk together the eggs, milk, salt, and pepper. Pour into the pan and scramble the eggs.
  8. Once the eggs are mostly cooked, add the shredded cheese and stir, cooking for an additional 3 minutes.
  9. Preheat the oven to 400 degrees F.
  10. Warm the tortillas in the microwave for 30 seconds to soften them.
  11. Slice the sausage patties in half.
  12. Drizzle picante sauce down the center of each tortilla.
  13. Add 2 sausage patty halves, a strip of bacon, and top with tater tots.
  14. Finish with 2-3 spoonfuls of the scrambled egg mixture, leaving 1-inch on each side of the tortilla.
  15. Fold the ends of the tortilla over the filling, then roll tightly to the other side.
  16. Place the burritos in the oven and bake for 7 minutes.
  17. Serve with extra picante sauce if desired and enjoy!

Notes

Feel free to customize fillings with your favorite ingredients.
For added spice, use a hotter picante sauce or add jalapeños.
These burritos can be made ahead of time and reheated.
