- 2 cups frozen tater tots
- 8 ounce block cheddar cheese
- 2 tablespoons butter
- 6 breakfast sausage patties
- 6 slices bacon
- 2 roma tomatoes, diced
- ½ white onion, diced
- 1 green bell pepper, diced
- 6 eggs
- ¼ cup milk
- ½ teaspoon salt
- ½ teaspoon pepper
- 6 burrito size flour tortillas

Instructions
- Bake the tater tots according to package directions.
- While the tater tots are baking, shred the cheese into a bowl and set aside.
- Heat a large frying pan over medium heat.
- Add butter to the pan and melt, then add the sausage patties and brown for 3 minutes on each side. Remove the patties and set aside.
- Add bacon to the pan and cook until crispy, then remove and place on a paper towel-lined plate. Discard all but 1-2 tablespoons of bacon drippings from the pan.
- Add the diced tomato, onion, and bell pepper to the pan and sauté for 3 minutes.
- In a bowl, whisk together the eggs, milk, salt, and pepper. Pour into the pan and scramble the eggs.
- Once the eggs are mostly cooked, add the shredded cheese and stir, cooking for an additional 3 minutes.
- Preheat the oven to 400 degrees F.
- Warm the tortillas in the microwave for 30 seconds to soften them.
- Slice the sausage patties in half.
- Drizzle picante sauce down the center of each tortilla.
- Add 2 sausage patty halves, a strip of bacon, and top with tater tots.
- Finish with 2-3 spoonfuls of the scrambled egg mixture, leaving 1-inch on each side of the tortilla.
- Fold the ends of the tortilla over the filling, then roll tightly to the other side.
- Place the burritos in the oven and bake for 7 minutes.
- Serve with extra picante sauce if desired and enjoy!

For added spice, use a hotter picante sauce or add jalapeños.
