Description

Enjoy a refreshing Caprese Pasta Salad made with rotini, fresh mozzarella, cherry tomatoes, and a delightful balsamic dressing. It’s a perfect dish for summer gatherings or a quick weeknight meal, bursting with flavor and easy to prepare.


Ingredients

  • ½ cup premium olive oil
  • 4 Tablespoons white balsamic vinegar
  • 1 Tablespoon dijon mustard
  • 1 Tablespoon prepared pesto
  • 1 clove garlic minced
  • 2 teaspoons granulated sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 pound cooked rotini pasta rinsed with cold water and drained
  • 1 pound cherry tomatoes cut in half
  • 1 pound mozzarella pearls
  • ½ cup torn fresh basil leaves


Instructions

  1. In a large bowl, whisk together the olive oil, white balsamic vinegar, dijon mustard, prepared pesto, minced garlic, granulated sugar, kosher salt, and black pepper.
  2. Add the rotini pasta to the bowl and toss it in the dressing until well coated.
  3. Stir in the halved cherry tomatoes and mozzarella pearls gently.
  4. Cover the salad and chill it in the refrigerator for at least 2 hours.
  5. Right before serving, gently stir in the torn fresh basil leaves.

Notes

Adjust the quantity of balsamic vinegar based on your preference for tanginess.
This salad can be made a day in advance for better flavor.
Feel free to add other ingredients like olives or arugula for variation.
