Description

This Caprese Pasta Salad features a delightful mix of fresh basil, juicy grape tomatoes, and creamy mozzarella. Perfect for a quick dinner or a healthy meal, it’s simple to prepare and full of flavor, making it a winning dish for any food lover.


Ingredients

  • 1 lb. pasta (of choice)
  • 3/4 cup extra-virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon salt (add more to taste)
  • 1 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup fresh basil (cut into ribbons)
  • 16 ounces grape tomatoes (cut into half, lengthwise)
  • 16 ounces fresh mozzarella balls
  • balsamic glaze (to drizzle all over the top)


Instructions

  1. Boil a large pot of water. Add salt generously. Cook the pasta according to package instructions. Drain and let cool.
  2. Slice grape tomatoes lengthwise and sprinkle them with salt.
  3. Mix olive oil and balsamic vinegar, adding salt, pepper, oregano, and red pepper flakes. Toss this dressing with the pasta.
  4. Incorporate tomatoes, basil, and mozzarella balls into the pasta. Mix until well combined and adjust salt to taste.
  5. Drizzle balsamic glaze generously on top before serving. Add extra basil if desired.
  6. Store in the refrigerator, covered.

Notes

For an extra kick, consider adding more red pepper flakes.
This salad can be served immediately or chilled for a refreshing taste.
