- 1 lb. pasta (of choice)
- 3/4 cup extra-virgin olive oil
- 3 tablespoons balsamic vinegar
- 1 teaspoon salt (add more to taste)
- 1 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup fresh basil (cut into ribbons)
- 16 ounces grape tomatoes (cut into half, lengthwise)
- 16 ounces fresh mozzarella balls
- balsamic glaze (to drizzle all over the top)
Instructions
- Boil a large pot of water. Add salt generously. Cook the pasta according to package instructions. Drain and let cool.
- Slice grape tomatoes lengthwise and sprinkle them with salt.
- Mix olive oil and balsamic vinegar, adding salt, pepper, oregano, and red pepper flakes. Toss this dressing with the pasta.
- Incorporate tomatoes, basil, and mozzarella balls into the pasta. Mix until well combined and adjust salt to taste.
- Drizzle balsamic glaze generously on top before serving. Add extra basil if desired.
- Store in the refrigerator, covered.
Notes
For an extra kick, consider adding more red pepper flakes.
