Description

Cheesy Chicken Taquitos pack irresistible flavor into a simple meal. With tender shredded chicken, melty cheese, and corn, these homemade delights are perfect for a quick dinner or a fun snack.


Ingredients

  • 4 cups shredded chicken
  • 2 cups cheddar cheese, grated
  • 2 cups frozen corn, no need to thaw
  • 2-3 tbsp taco seasoning
  • 16 medium flour tortillas


Instructions

  1. In a bowl, combine shredded chicken, grated cheddar, frozen corn, and taco seasoning.
  2. Mix well until evenly distributed and adjust seasoning to taste for a flavorful filling.
  3. Lay a tortilla flat on a surface.
  4. Spoon a line of filling across the bottom third of the tortilla, keeping it tight and compact.
  5. Roll up the tortilla tightly and place seam-side down on a lined baking tray.
  6. Repeat the rolling process with remaining tortillas and filling, ensuring they are tightly rolled to prevent falling apart.
  7. Lightly spray or brush the taquitos with oil on all sides.
  8. Arrange taquitos in a single layer in the air fryer basket, ensuring space between each.
  9. Air fry at 400°F (200°C) for 10 to 12 minutes, flipping halfway, until golden and crispy.
  10. Serve warm with your choice of side dishes.

Notes

For an extra cheesy filling, add more cheddar cheese.
Make sure to roll the taquitos tightly to prevent them from falling apart while cooking.
