Description

This Classic Caesar Salad is a refreshing dish with bold flavors and a creamy dressing. Perfect for a quick dinner or a healthy meal, it combines crisp romaine lettuce, homemade dressing, and crunchy croutons. Satisfying and easy to prepare, this salad will impress everyone at your table.


Ingredients

  • 1 large egg yolk
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup olive oil, up to 3/4 cup
  • 1 teaspoon anchovy paste
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, grated
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon cracked black pepper
  • Salt to taste
  • 9-10 oz. romaine lettuce, chopped (~5 cups)
  • 1/2 cup shredded parmesan cheese
  • 1 cup croutons


Instructions

  1. In a medium bowl, whisk together the egg yolk, Dijon mustard, and lemon juice until it becomes frothy.
  2. While whisking vigorously, slowly drizzle in the olive oil until the mixture thickens.
  3. Mix in the anchovy paste, grated Parmesan cheese, garlic, Worcestershire sauce, and cracked black pepper. Adjust salt to taste. Set aside.

Notes

For extra creaminess, use up to 3/4 cup of olive oil.
Feel free to add grilled chicken or shrimp for added protein.
Store leftover dressing in the refrigerator for up to a week.
