  • 4 oz. shredded cheddar cheese, ~1 cup
  • 1 teaspoon taco seasoning
  • 1/2 cup pico de gallo

  1. Blend the cottage cheese in a blender or food processor on high speed until smooth.
  2. Pour the blended cottage cheese into a microwave-safe bowl. Add the shredded cheddar cheese and taco seasoning.
  3. Microwave on high for 1 minute, then stir. Continue microwaving in 30-second increments, stirring each time, until smooth and creamy.
  4. Return the warmed queso to the blender and blend until completely smooth.
