- 200 g ground almonds (almond meal or almond flour, 2 cups)
- 100 g granulated sugar (½ cup)
- 200 g milk chocolate (1 cup + 2 tbsp)
- 110 g melted butter (½ cup)
- 25 g cocoa powder (2 tbsp)
- 3 eggs
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
Instructions
- Preheat the oven to 180 degrees Celsius (350 Fahrenheit).
- Melt the milk chocolate until smooth, using an electric melting pot, a bowl over simmering water, or a microwave.
- In a pan, melt the butter over low heat.
- Combine the melted butter and chocolate in a large mixing bowl, whisking until smooth.
- Add sugar and whisk well.
- Crack in all the eggs and whisk again quickly for a thicker mixture.
- Mix in the ground almonds, cocoa powder, baking powder, and vanilla extract using a spatula.
- Line a 20 cm (8 inches) round cake tin with non-stick paper and pour in the batter evenly.
- Bake for 45 minutes or until a skewer inserted in the center comes out clean.
- Remove from the oven and let the cake cool completely.
- Dust with cocoa powder and decorate with fresh fruit if desired.
