Ingredients
Scale
- 1 lb grass-fed ground beef (85/15)
- 3/4 teaspoon kosher salt
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon baking soda
- 1 tablespoon olive oil
- 1/2 yellow onion, chopped
- 2 garlic cloves, thinly sliced
- 12 oz broccoli florets, cut into bite-sized pieces
- 3 scallions, thinly sliced, plus more for garnish
- sesame seeds, for garnish
- 1/4 cup soy sauce
- 1/4 cup warm water
- 1 tablespoon oyster sauce
- 3 tablespoons brown sugar
- 2 teaspoons grated ginger or ginger paste
- 1 teaspoon toasted sesame oil
- 2 teaspoons cornstarch
Instructions
- In a small bowl, combine the ground beef with kosher salt, white pepper, and baking soda. Mix well and let sit for 15 minutes.
- Slice the white/light green parts of the scallions into 1-inch pieces, and thinly slice the dark green parts separately.
- In another bowl, mix brown sugar with warm water until dissolved. Add soy sauce, oyster sauce, ginger, and sesame oil, then whisk in cornstarch until smooth.
- Heat a large wok or nonstick skillet over medium heat for 5 minutes. Drizzle with olive oil, then add chunks of ground beef and cook undisturbed for 3-4 minutes until browned. Flip and cook for an additional 2 minutes. Remove and set aside, leaving about 2 tablespoons of fat in the pan.
- In the same skillet, add broccoli and cook for 3-4 minutes until lightly browned. Add onions and garlic and cook for another 2-3 minutes until onions soften.
- Return the beef to the pan, pour in the sauce, and cook for 2-3 minutes until thickened. Garnish with remaining scallions and sesame seeds, serving over rice.
Notes
For extra flavor, add some crushed red pepper flakes to the sauce.
Serve this dish over steamed rice or noodles for a complete meal.
You can substitute ground beef with chicken or turkey for a lighter option.
