Ingredients

  • ⅓ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 2 tablespoons chopped shallot
  • 1 tablespoon dijon mustard
  • 1 garlic clove
  • 1 tablespoon honey, or more to taste
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper


Instructions

  1. In a blender, combine the olive oil, balsamic vinegar, chopped shallot, dijon mustard, garlic, honey, sea salt, and black pepper. Blend until smooth.
  2. If you don't have a blender, mince the shallot and garlic finely, then combine all ingredients in a mason jar. Whisk together or shake well until emulsified.
  3. Store leftovers in an airtight container in the fridge for up to a week. The dressing may separate and thicken when chilled, so stir well before each use.
