Ingredients

  • 6 cups water
  • 3-4 tablespoons luisa sazón seasoning
  • 2 teaspoons tomato paste
  • salt to taste
  • optional garnishes: cilantro, jalapeno slices, flaky salt


Instructions

  1. Soak the beans overnight for better digestion.
  2. Place the soaked pinto beans and water in the Instant Pot.
  3. Seal the lid and cook on high pressure for 30 minutes.
  4. Allow a natural release for 15 minutes, then carefully release any remaining pressure.
  5. Switch the Instant Pot to sauté mode.
  6. Stir in the seasoning and tomato paste until well combined.
  7. Let the beans simmer for about 20 minutes, stirring occasionally, until the liquid thickens and becomes flavorful.
  8. Taste and adjust seasoning with salt as needed. Serve warm.
