- 2 tbsp butter
- 1/2 cup onion, finely diced
- 1 cup arborio rice
- 1 tsp rosemary
- 1/2 tsp salt
- 2 cup chicken broth
- 1/2 cup parmesan cheese
Instructions
- Set the Instant Pot to sauté mode, then add butter and onions. Sauté until the onions soften, then turn off the pot.
- Add the arborio rice, rosemary, salt, and chicken broth to the pot. Stir to combine all ingredients.
- Seal the lid and close the steam valve. Select pressure cook at high pressure for 8 minutes. After cooking, let the steam naturally release for 1 minute, then release the remaining steam.
- Open the lid, fluff the rice with a fork, and mix in the parmesan cheese. Serve warm and enjoy.
Notes
For a creamier texture, add more cheese before serving.
You can substitute vegetable broth for a vegetarian version.
