Description

Experience a delightful twist on comfort food with this creamy risotto. Featuring arborio rice, buttery notes, and aromatic rosemary, it’s simple to prepare and makes for an excellent quick dinner that will please everyone.


Ingredients

  • 2 tbsp butter
  • 1/2 cup onion, finely diced
  • 1 cup arborio rice
  • 1 tsp rosemary
  • 1/2 tsp salt
  • 2 cup chicken broth
  • 1/2 cup parmesan cheese


Instructions

  1. Set the Instant Pot to sauté mode, then add butter and onions. Sauté until the onions soften, then turn off the pot.
  2. Add the arborio rice, rosemary, salt, and chicken broth to the pot. Stir to combine all ingredients.
  3. Seal the lid and close the steam valve. Select pressure cook at high pressure for 8 minutes. After cooking, let the steam naturally release for 1 minute, then release the remaining steam.
  4. Open the lid, fluff the rice with a fork, and mix in the parmesan cheese. Serve warm and enjoy.

Notes

For a creamier texture, add more cheese before serving.
You can substitute vegetable broth for a vegetarian version.
