Description

This Savory Sweet Potato Stir Fry combines the natural sweetness of sweet potatoes with vibrant bell peppers and aromatic spices. Perfect for a quick dinner or a healthy meal, this dish is not only easy to prepare but also bursting with delicious flavors that everyone will love.


Ingredients

  • 2 large sweet potatoes
  • 2 sweet bell peppers (red and green)
  • 1 tablespoon cooking oil (avocado oil is preferred)
  • 1 shallot or onion
  • 2 garlic cloves (minced)
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • 1 tablespoon lemon juice
  • Kosher salt and ground black pepper
  • Fresh cilantro or basil leaves for garnish (optional)


Instructions

  1. Peel the sweet potatoes and cut them into bite-sized cubes. Cut the peppers into bite-sized pieces and remove the seeds. Chop the shallots and mince the garlic.
  2. Heat the oil in a heavy-bottomed pan, like a cast iron skillet, for a nice grilled char.
  3. Add the cubed sweet potatoes to the pan, sprinkle with salt, and stir well. Cover the pan and let sweat for 8-10 minutes.
  4. Remove the lid and add the remaining ingredients. Cook on high heat for 3-4 minutes, stirring occasionally for even cooking.
  5. Turn off the heat, drizzle lemon juice over the dish, adjust salt and pepper to taste, garnish with fresh herbs, and serve warm.

Notes

Make sure to cut the sweet potatoes into even-sized cubes for uniform cooking.
For added flavor, consider adding other seasonal vegetables.
