- 220 g buckwheat flour
- ½ tsp baking soda
- ½ tsp kosher salt
- 113 g unsalted butter, melted
- 100 g granulated sugar
- 75 g light brown sugar
- 1 egg, room temperature
- 100 g sourdough discard or active sourdough starter
- 1 tsp vanilla extract
- 170 g semi-sweet chocolate, coarsely chopped, plus more for topping
- Flaky salt, for topping, optional
Instructions
- Whisk the buckwheat flour, baking soda, and salt together in a small bowl and set aside.
- In a large mixing bowl, combine melted butter, egg, granulated sugar, brown sugar, vanilla, and sourdough discard, whisking until smooth.
- Fold the dry ingredients into the wet mixture using a spatula until just a few floury spots remain, then gently fold in the chopped chocolate.
- Cover and chill the cookie dough for at least one hour to enhance the flavors and ease rolling.
- Preheat the oven to 350ºF (177ºC) and line baking sheets with parchment paper.
- Scoop out 2 tablespoons (43g) of cookie dough, roll into balls, and place a few inches apart on the baking sheets. Top with additional chocolate and flaky salt if desired.
- Bake for 13-14 minutes or until the edges are set. Tap the pans on the counter 2 minutes before they finish baking and again immediately after to help them spread.
- Cool on a wire rack for at least 15 minutes before enjoying.
Notes
Chilling the dough enhances the flavor and texture of the cookies.
For a softer cookie, avoid over-baking.
Using room temperature eggs helps in better incorporation with other ingredients.
