Description

This Strawberry Almond Salad with Spinach and Feta offers a delightful blend of flavors with fresh strawberries, creamy feta, and crunchy almonds. Perfect for a quick lunch or a light dinner, it’s simple to prepare and bursting with nutrients!


Ingredients

  • 4 cups mixed greens
  • 1 ripe avocado sliced thin
  • 1 cup strawberries rinsed, tops removed, and sliced thin
  • ¼ cup toasted sliced almonds
  • 2 ounces feta cheese crumbled
  • salt & pepper to taste
  • ¼ cup dijon mustard
  • ¼ cup honey
  • 1 tablespoon olive oil
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon minced garlic


Instructions

  1. Layer 2 cups of mixed greens in the bottoms of two salad bowls.
  2. Arrange half of the avocado, strawberries, almonds, and feta in each bowl of lettuce.
  3. Season with salt and pepper to taste.
  4. In a mixing bowl, prepare the honey mustard dressing by whisking together dijon mustard, honey, olive oil, apple cider vinegar, and minced garlic until well combined.
  5. Serve the salad with the dressing.

Notes

You can personalize the salad by adding more vegetables or nuts as desired.
