- ⅓ cup sweet chili sauce
- 1 teaspoon sriracha sauce
- 1 teaspoon lime juice
- 12 ounces large shrimp thawed and peeled
- 1 can pineapple chunks drained well
- oil for the grill grates, if needed
- Lime wedges for serving, optional
- chopped cilantro optional for garnish
Instructions
- In a small bowl, combine sweet chili sauce, sriracha sauce, and lime juice. Add the shrimp and toss to coat, then let marinate for 15-20 minutes.
- Preheat your grill to medium-high heat while the shrimp marinates.
- Assemble the skewers, threading shrimp with a pineapple chunk in between each piece. You should end up with about 6 skewers.
- If necessary, oil the grill grates, then place the skewers on the grill. Cook for 2-3 minutes, brush the tops with leftover marinade, then flip and grill for another 2-3 minutes until the shrimp is fully cooked.
- Once cooked, remove from the grill and serve with lime wedges, a sprinkle of cilantro, and additional sweet chili sauce for dipping if desired.
Notes
Feel free to adjust the level of spiciness by modifying the amount of sriracha sauce used.
For an even more flavorful dish, add some bell peppers or onions to the skewers.
